Tortas = Gourmet Mexican Sandwich although the word torta has different meanings in different Spanish-speaking countries. In Mexican cuisine, the torta is very popular and every region of Mexico has a local twist or favourite. Pabloʼs specialty contains slow-cooked pulled pork tinga style, he therefore decided to call it the Tinga Torta. Other popular varieties include Chicken Izo (Chicken & chorizo in one sandwich!), Sloppy José (A Mexican take on the sloppy joe) and the Sweet Pepper (a sturdy and tasty vegetarian sandwich).
Tortas are actually more celebrated and more popular than burritos in Mexico and are an authentic taste of Central American culture despite the format being so familiar to us Europeans.
Pablo prepares the torta fillings daily, including jalapeño mayonnaise, roast, pasilla chicken, chipotle ground beef and 2(!) different types of pulled pork.
Once the torta is complete, Pabloʼs team let it crisp up in the turbo oven for the perfect first bite.
